Gluten-Free/Dairy-Free Chocolate Chip Cookies!
I REALLY wish I had a better picture of these to share, but they just don't last long enough to get a good pic! These may just be the BEST cookies you've ever had, even if you don't live a Gluten-Free/Dairy-Free diet! Here you go:
Ingredients:
2 2/3 Cups GF flour
1 tsp. baking soda
1 tsp. salt
3/4 Cup Brown Sugar
3/4 Cup Granulated Sugar
3/4 Cup Coconut Oil
2 large Eggs
2 tsp. Vanilla Extract (use the good stuff!)
1 Cup Dairy-free Chocolate Chips
Preheat oven to 375.
Combine flour, baking soda, salt; set aside.
Melt Coconut oil, and blend with sugars and vanilla. Add eggs one at a time.
Mix in the dry ingredients; add chocolate chips.
Bake for 9 minutes (more or less depending on your oven), and cool ON the pan, on a wire cooling rack for an additional 2 minutes.
Makes approximately 2 dozen cookies. (that is, if you don't consume the dough as you go!)

This morning I made Gluten-Free/Dairy-Free CHOCOLATE Donuts with Chocolate frosting . . . Oh me oh my were they DELISH!!! Donuts are something that we can't just go pick up on a Gluten-Free diet, so this was QUITE a treat. (and, I might add, these turned out WAY better than the donut shop Devil's food!!!) The recipe is from the cookbook, Cooking for Isaiah by Silvana Nardone . . . definitely my FAVORITE, kid-friendly Gluten-Free cookbook . . . check it out!
